Basil pappardelle in a veggie garlic white wine sauce


1 tablespoon chopped garlic
1/2 cup white wine
1/2 teaspoon salt
1/2 cup sundried tomatoes (chopped)
10 cherry tomatoes (sliced)
6 grilled artichokes in olive oil (chopped)
bunch of fresh parsley (chopped)
1 bay leaf
2 tablespoons Olive Oil
1 tablespoon butter (optional)
Basil pappardelle or regular pasta (add fresh chopped basil)

Heat olive oil in large sauce pan, add garlic, bay leaf, and basil, and fry for around 5-7 minutes. Add cherry tomatoes, artichokes, wine, parsley and salt and continue to cook for another 10-15 minutes ( add butter). Add cooked pasta and stir.

Serve w/ Greek Kalamata olives & bread
